Whole 30 Breakfast Bake

Hey y’all!

Breakfast has been one of the easier meals for me during Whole 30 – mostly because I eat an egg for breakfast most days anyway.

On Saturday’s I love to eat a little later and have something more decadent than I would on a Tuesday.

This has been one of my go to recipes for a while but I’ve appreciated it even more during Whole 30.

What You’ll Need:

1 egg

1 small sweet potato

1 tsp. Trader Joe’s Everything But the Bagel

What You’ll Do:

1. Preheat oven to 425. Cover baking sheet with aluminum foil and spray with avocado oil. Cube sweet potato into small cubes, toss with a little bit of oil and season with salt and pepper.

2. While the sweet potato is in the oven, cook egg to your preference with avocado oil in a pan. I prefer over easy and cook it on high for a minute or two then turn off the heat and place a lid over. The steam will be finish cooking the egg and make it so soft!

3. Arrange egg over cooked sweet potatoes and season egg with everything but the bagel mix.

I live and die for Trader Joe’s Everything but the Bagel seasoning. It is SO delicious and I seriously could eat it with everything. If you can get your hands on it – buy it. Then buy two more for good measure.
