If I were to write a book about my Whole 30 experience, it would be called “Whole 30: One Woman’s Journey of 30 Days of Salads.” This salad is my favorite these days.
To make it, I use a big batch of my Buffalo Chicken but omit the cornstarch step to make it Whole 30 compliant. You can check the recipe out here.
What You’ll Need:
2 cups of spinach
1/2 cup of buffalo chicken
1/4 cup of red onion, chopped
1 tbsp. Tessamae’s Zesty Ranch dressing
1 tsp. crushed red pepper
What You’ll Do:
1. Finely chop your spinach then combine with onion, red pepper and ranch.
2. Warm up pre-made buffalo chicken and place on top.
3. Cube up the avocado and place on side.
This recipe is so easy its ridiculous. But its also stupid delicious. The warm chicken over the spinach wilts it just the tiniest bit and it is so tasty.
I highly recommend making big batches of protein early on in the week so that you can just grab things without thinking about it.
Also, I highly recommend adding a healthy fat, like an avocado, to help fill you up and keep you full for several hours.
