Three Ingredient Thursday: Buffalo Chicken Quinoa Bowl

Hey y’all,

I’m so excited to kick off a new monthly series called ‘Three Ingredient Thursday.’ Each installment will feature a recipe that takes only three ingredients to make. These ingredients don’t include spices and seasonings or broth, but will generally only be comprised of three main components.

The first recipe I’m featuring is my go to dinner. I have this bowl probably once a week, minimum. It’s super easy to make – less than 20 minutes – and very filling. Plus, it’s a great way to get in some whole carbs and protein.

Y’all know how much I adore spicy food and this is a great recipe because you can make it as mild or hot as you please.

What You’ll Need:

1 cup cooked quinoa

1 grilled chicken breast, roughly 2 – 3 oz.

¼ cup of Frank’s Red Hot

What You’ll Do:

  1. Cook 1/3 cup of quinoa in 1 ¼ cup broth or water. Let cool for 2-4 minutes.
  2. In a bowl, combine cooked grilled chicken and quinoa. Mix well.
  3. Drizzle in your hot sauce of choice. I love Frank’s for this

What You’ll Need to Know:

It’s super important when making quinoa that you do two parts broth / water for every one part quinoa. You can definitely make quinoa with water, but I find that vegetable or chicken broth makes it more flavorful. Also, I find that my best quinoa creations are when I ‘babysit’ it rather than just leaving on the stove top and stirring once or twice.
