A couple of weeks ago I was REALLY craving some good old fashioned carbs, but I wanted to eat something that wouldn’t break the points bank (what up Weight Watchers) or leave me feeling super guilty an hour later.
Plus, I have been on a huge barbecue kick lately. If you can’t tell, I am a gal that loves a sauce (especially buffalo).
Enter these delicious and super quick quesadillas.
What You’ll Need:
2 tortillas (I used the large size)
3 tablespoons of barbecue sauce (I love the 365 brand one)
1/4 cup of cheese
1 cup of grilled chicken (shredded or diced)
Red onion to taste
What You’ll Do:
- Spoon on about a tablespoon and a half of BBQ sauce on each tortilla, making sure not to get too close to the corners.
- Layer on cheese, chicken, and red onions.
- Over medium heat, grill the quesadilla for about 3 – 5 minutes on each side or until the cheese is thoroughly melted.
- For ease and convenience, cut the quesadilla with a pizza cutter.
What You’ll Need to Know:
I have since made this recipe a couple of more times and have added more barbecue sauce (the new amount is reflected in the ingredient list) and have shredded the chicken. Shredding the chicken made a HUGE difference and I felt like it tasted even better because the bites of chicken were more evenly distributed. That being said, both ways are amazing and this has become a lunch staple for me. Even my mom, who can sometimes be picky, loves these! Also, I am a huge fan of the La Tortilla Factory tortillas because they are super low in carbohydrates and only have two points per tortilla.
This quesadilla has about 10 points, dependent upon the cheese and sauce you use. I usually try to have a salad for lunch, but on days when I need a carb or the comfort of a carb, this does the trick.
