I’m not kidding when I say that I could have a salad or sandwich for every meal for the rest of my life.
I love salads and how much you can do with them and that really no two salads are the same.
My most current obsession is this AH-MAZING southwest salad that I’ve been eating basically every day.
What You’ll Need:
1.5 c Organic Girl Super Greens or greens of choice
1/3 c mixed bell peppers
1/3 c red onion
1/3 c organic corn
1/3 c organic black beans
1/3 c lean ground turkey
2 tbsp. Cowboy Caviar
2 tbsp. Picante Salsa
Lime juice to taste
Cilantro to taste
Jalapeños to taste
What You’ll Do:
1. In a large bowl or plate, lay down the greens.
2. Gently layer on vegetables, salsa, and meat.
3. Add cowboy caviar in the center where the vegetables meet.
4. Sprinkle on the juice of half a lime and cilantro to taste.
What You’ll Need to Know:
My biggest piece of advice for this salad is to go ahead and just prep. I cut up a TON of veggies ahead of time and just keep them stocked up in my refrigerator so I just have to measure out the vegetables and throw them into the salad. Doing this especially helps when I’m on the go and don’t have a ton of time to prep a delicious and healthy lunch.
Also, this salad is equally delicious without meat too, so it is a great vegetarian meal as well.
This yummy salad is only 10 weight watchers points, and is incredibly filling – which is what I look for in a meal.
