After a couple weeks of posting sporadically or not at all, I’m back to getting on a schedule.
And speaking of getting back into a routine, I’m majorly revamping my diet and fitness plan.
I have been pretty good about working out and have a relatively healthy diet, but the last two weeks I’ve completely fallen off the wagon in terms of diet and exercise. I was sick and then went to the beach for 8 days, and truthfully just did not care.
Part of my plan to get back on track is to really focus on a manageable, realistic regime. I follow Mallory Ervin on Instagram and she’s been doing Weight Watchers for a while and then I got an email from Fitbit waiving the joining fee and the first month at 50% off, so I caved.
I’m going to do an entire post about it in a couple of weeks after I’ve been using it for a while, but my initial reaction is that I’m obsessed and feel like I’m holding myself more accountable than when I used MyFitnessPal.
Today I’m sharing with y’all my new favorite breakfast. I find that I stay full for longer and have more energy if I eat a really high protein diet that is low in fat and carbs, so eggs are the perfect breakfast for me.
What You’ll Need:
2 large eggs
2 tablespoons of picante salsa
1/8 cup of jalapeños (optional)
Lime juice to taste
Cilantro to taste
What You’ll Do:
1. In a heavy duty, no-stick pan cook your eggs over easy.
2. Place the eggs on a plate, top with jalapeños, picante, and lime juice and cilantro to taste
What You’ll Need to Know:
I prefer organic, range free eggs, but my dad and brother are CONVINCED that brown eggs taste different than white ones (I don’t believe them). I’m also obsessed with an egg over easy, I adore a runny yolk, but you can scramble, fry, or poach your eggs, too! Lastly, in order to cut back on calories and get the most nutritional value out of your breakfast, it’s really important to use a high quality skillet. We have this set and they are seriously life changing. These ceramic pans are seriously so smooth and non-stick that no cooking spray, olive oil or butter is necessary, which is great because no hidden, additional calories.
As y’all know by now, I’m obsessed with all things spicy and this breakfast gives me a kick in the morning and keeps me energized throughout the day.
Finally, my most important dieting tip is the size of your plate. I’ve been using salad plates lately because they are smaller and therefore look fuller with food, which tricks your brain into thinking you ate more than you did. Portion control containers are also another big thing for me – I got this set from Amazon.
