Happy Valentine’s Day, my lovebugs!!
I hope you’re spending your day surrounded by your loved ones, your significant other, or copious amounts of rose like I will be.
I’m sorry for the lack of posts last week, I was busy traveling for job interviews (eek, cross your fingers for me!) and nannying.
Today I’m going to be sharing an easy, yummy pie recipe that you can share with your sweetie or binge eat yourself.
This isn’t my most ‘skinny’ recipe, but trust me when I say it is an amazing indulgence.
What You’ll Need:
1 unbaked pie crust
3 0z. semi-sweet chocolate chips
2 eggs, beaten
3/4 cup chopped pecans
1/2 cup sugar
1/2 cup light corn syrup
1/4 cup melted butter
1 tablespoon bourbon
What You’ll Do:
1. Preheat oven to 350 degrees
2. Spread chocolate chips and pecans into the thawed pie crust.
3. combine the remaining ingredients and pour into pie crust, making sure eggs are beaten thoroughly.
4. Bake for 45 to 50 minutes.
5. Garnish with toppings of your choice, or enjoy plain!
What You’ll Need to Know:
So my mom and I aren’t the biggest bakers, I love it but don’t often have the patience and precision, so we take the shortcut route and buy a store bought pie crust. Also, in the interest of time, I would suggest using pre-crushed pecans. I love chocolate so I snuck a few extra chocolate chips in and an extra splash of bourbon, because why not??
This pie is a mainstay at all of our holiday celebrations and it never lasts long because people love it.
It’s also a really delicious treat to have just because with a glass of red wine.
